Hello-
We are traveling to Costa Rica with our 3 kids (all over 16). We fly in to San Jose and will be going to La Fortuna, Monteverde and the Tamarindo area, flying out through Liberia. Should we rent a car or hire rides?

With respect to your specific route (San Jose -> La Fortuna -> Monteverde -> Tamarindo -> Liberia), the roads into and out of the destinations you intend to visit aren’t overly challenging, so I wouldn’t opt out of renting a car purely because of road conditions.
